- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon (about 3 tablespoons)
- 2 teaspoons dried oregano
- 4 cloves fresh garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
Instructions
- In a bowl, mix olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken breasts to the marinade; coat well and marinate for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- Place marinated chicken breasts in a baking dish with halved cherry tomatoes.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the tomatoes are slightly blistered.
- In the last five minutes of baking, sprinkle crumbled feta cheese over the dish and allow it to melt slightly.
- Garnish with chopped parsley before serving. Pair with rice or crusty bread.
