- 2 fresh salmon fillets (about 6 oz each)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, finely chopped
- 1 tbsp fresh dill, chopped
- 2 garlic cloves, minced
- Zest of 1 lemon
- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- In a bowl, mix parsley, dill, garlic, lemon zest, panko breadcrumbs, salt, and pepper until well combined.
- Place salmon fillets skin-side down in the baking dish. Drizzle olive oil over each fillet and spread the herb mixture evenly on top.
- Bake for 12-15 minutes until the salmon flakes easily with a fork.
Notes
- For variety, replace salmon with trout or chicken.
- Use different herbs like thyme or basil for unique flavors.
