Ingredients
Scale
- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 2 large fresh lemons (juiced and zested)
- 1/4 cup fresh parsley (chopped)
- 2 tablespoons fresh thyme leaves
- 4 garlic cloves (minced)
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together lemon juice, zest, minced garlic, parsley, thyme, olive oil, salt, and pepper to create the marinade.
- Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over them. Seal or cover tightly and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat (around 400°F).
- Remove chicken from marinade and let excess drip off. Grill each breast for about 6-7 minutes per side until cooked through and juices run clear.
- Transfer cooked chicken to a plate and let it rest for five minutes before slicing.
- Serve with grilled vegetables or a fresh salad.
Notes
- For additional flavor, consider adding sliced jalapeños or swapping lemon for lime in the marinade.
- Marinate for up to two hours for enhanced flavor absorption.
- Always use a meat thermometer; chicken should reach an internal temperature of 165°F.
