Instructions
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, salt, and pepper.
- Add chicken breasts to the marinade, coating evenly. Refrigerate for at least 30 minutes or up to overnight for maximum flavor.
- Preheat grill to medium-high heat (about 400°F).
- Grill chicken for 6-7 minutes on each side until fully cooked and juices run clear.
- During the last few minutes of grilling, brush with remaining marinade for added flavor.
- Let chicken rest for 5 minutes before slicing and serving.
