- 1.5 lbs boneless chicken thighs
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 4 garlic cloves, minced
- 2 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- Optional: 2 tbsp fresh herbs (thyme or rosemary), chopped
Instructions
- In a bowl, mix together olive oil, lemon juice, minced garlic, paprika, salt, and pepper.
- If using, stir in the chopped fresh herbs.
- Place the chicken thighs in a resealable bag or shallow dish; pour the marinade over them and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat (375°F).
- Grill the marinated chicken thighs for about 6-7 minutes per side until the internal temperature reaches 165°F.
- Let rest for 5 minutes before serving.
