Ingredients

  • 1 lb baby potatoes, halved or quartered
  • 4 cloves fresh garlic, minced
  • 4 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and golden.
  2. While the potatoes roast, heat a skillet over medium-high heat with the remaining tablespoon of olive oil. Add steak bites and season with salt and pepper. Sear for about 3-4 minutes on each side until browned.
  3. Reduce heat and add butter and minced garlic to the skillet with the steak. Sauté until fragrant, about 1 minute.
  4. Combine the roasted potatoes with the steak in the skillet. Toss gently to coat everything in the garlic butter sauce.
  5. Garnish with fresh parsley if desired and serve immediately.
