- 1 lb sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved or quartered
- 4 cloves fresh garlic, minced
- 4 tbsp butter
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C). Toss the baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and golden.
- While the potatoes roast, heat a skillet over medium-high heat with the remaining tablespoon of olive oil. Add steak bites and season with salt and pepper. Sear for about 3-4 minutes on each side until browned.
- Reduce heat and add butter and minced garlic to the skillet with the steak. Sauté until fragrant, about 1 minute.
- Combine the roasted potatoes with the steak in the skillet. Toss gently to coat everything in the garlic butter sauce.
- Garnish with fresh parsley if desired and serve immediately.
Notes
- For added nutrition, consider swapping baby potatoes for sweet potatoes or adding seasonal vegetables.
- Store any leftovers in an airtight container in the fridge and reheat gently on low heat.
