- 8 oz dark chocolate (70% cocoa)
- ½ cup unsalted butter
- 1 cup granulated sugar (or coconut sugar)
- 4 large eggs
- ⅓ cup unsweetened cocoa powder
- 1 tsp pure vanilla extract
- ¼ tsp salt
Instructions
- Preheat your oven to 375°F (190°C). Grease and line an 8-inch round pan with parchment paper.
- Melt dark chocolate and butter together in a microwave-safe bowl or double boiler until smooth. Stir frequently.
- In a separate bowl, whisk together sugar and eggs until pale and fluffy.
- Gently fold cocoa powder and vanilla extract into the egg mixture until just combined.
- Slowly pour the melted chocolate mixture into the egg mixture, folding gently to maintain airiness.
- Pour batter into the prepared pan and bake for about 25 minutes or until set around the edges; center should jiggle slightly.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- For an enhanced flavor, consider adding a teaspoon of espresso powder.
