- 1 lb boneless chicken thighs
- 3 cloves fresh garlic, minced
- 2 tsp dried Greek oregano
- 4 pita breads
- 1 cup Greek yogurt (whole milk preferred)
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- 1 cup tomatoes, diced
- 1 cup cucumbers, sliced
- ½ red onion, thinly sliced
- Salt and pepper to taste
Instructions
- Marinade the Chicken: In a bowl, mix olive oil, minced garlic, oregano, lemon juice, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
- Cook the Chicken: Heat a grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes per side or until cooked through (internal temperature of 165°F).
- Prepare Toppings: Slice tomatoes, cucumbers, and red onions while the chicken cooks.
- Make the Sauce: Combine Greek yogurt with lemon juice and salt in a small bowl.
- Assemble Your Gyros: Warm pita slightly on the grill. Fill each pita with grilled chicken, veggies, and sauce.
- Serve & Enjoy: Serve immediately with extra sauce on the side.
