- 1.5 lbs boneless, skinless chicken breasts (about 3–4 pieces)
- 1.5 lbs baby potatoes (red or yellow)
- 2 tbsp Cajun seasoning
- 3 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh lemon juice
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, coat chicken breasts with olive oil and Cajun seasoning.
- Halve larger baby potatoes and toss them with olive oil and Cajun seasoning.
- Arrange the chicken on one side of a baking sheet and place the seasoned potatoes on the other.
- Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Drizzle with fresh lemon juice and sprinkle parsley before serving.

- For extra flavor, marinate the chicken for at least an hour before cooking.
- Swap in vegetables like bell peppers or zucchini for added nutrition.
- Use Yukon Gold potatoes for their creamy texture.
