- 200g spaghetti
- 2 large eggs
- 100g grated Parmesan cheese
- 1 tsp freshly cracked black pepper
- 2 tbsp olive oil
- 2 cloves garlic, minced (optional)
Instructions
- Boil salted water in a large pot over high heat. Add spaghetti and cook until al dente according to package instructions.
- In a bowl, beat eggs and mix in grated Parmesan cheese and black pepper until well combined.
- If using garlic, heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant, about one minute.
- Drain the pasta, reserving some cooking water. Add hot spaghetti to the skillet with garlic (if used). Remove from heat and quickly stir in the egg mixture to avoid scrambling.
- Gradually mix in reserved cooking water until you achieve a creamy consistency.
- Serve immediately, garnished with extra cheese and cracked pepper if desired.
