- 1 cup shrimp (peeled and deveined)
- 4 slices bread (soft white or whole grain, crusts removed)
- 2 green onions (finely chopped)
- 2 cloves garlic (minced)
- 1 large egg (beaten)
- 2 tsp low-sodium soy sauce
- 1 tsp sesame oil
- 2 tbsp cilantro (optional, chopped)
- Cooking oil for frying
Instructions
- Chop the shrimp into small pieces and mix with garlic, green onions, soy sauce, sesame oil, cilantro, and beaten egg in a bowl until sticky.
- Cut bread into triangles or rectangles and spread the shrimp mixture generously on each piece.
- Heat half an inch of oil in a skillet over medium heat until shimmering.
- Fry each slice shrimp-side down for about 2-3 minutes per side until golden brown.
- Drain excess oil on paper towels and serve hot.
Notes
- For added flavor, consider mixing lime zest or chili flakes into the shrimp mixture.
- To store leftovers, keep in an airtight container in the fridge and reheat in the oven for crispiness.
