Ingredients

  • 1 green bell pepper, sliced

  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 6 small flour or corn tortillas
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the bell peppers and onion into thin strips. Arrange them on one side of the baking sheet.
  3. In a bowl, toss the shrimp with olive oil and taco seasoning until well-coated. Spread the shrimp over the veggies on the baking sheet.
  4. Bake for 15-20 minutes until the shrimp turn pink and vegetables soften.
  5. Squeeze fresh lime juice over the fajitas before serving with warm tortillas.
