- 1 lb large raw shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- 6 small flour or corn tortillas
- Juice of 1 lime
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the bell peppers and onion into thin strips. Arrange them on one side of the baking sheet.
- In a bowl, toss the shrimp with olive oil and taco seasoning until well-coated. Spread the shrimp over the veggies on the baking sheet.
- Bake for 15-20 minutes until the shrimp turn pink and vegetables soften.
- Squeeze fresh lime juice over the fajitas before serving with warm tortillas.

- For added flavor, consider marinating shrimp for up to two hours before cooking.
- Feel free to add black beans or corn for extra texture and nutrition.
