- 1 cup bell peppers, chopped (any color)
- 1 cup zucchini, sliced

Instructions
- Chop bell peppers, zucchini, onion, and garlic into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned on both sides (about 5 minutes).
- Add onions to the skillet; sauté until translucent (about 2 minutes). Then, add bell peppers and zucchini; cook until softened slightly (about 3 minutes).
- Sprinkle Italian seasoning, salt, and pepper over the mixture; stir well and let it cook for an additional 5-7 minutes until veggies are tender but still crisp.
- Serve hot, garnished with fresh herbs if desired.
