  • 2 ripe lemons (juiced and zested)
  • 4 cloves fresh garlic (minced)
  • 2 tablespoons fresh thyme (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, thyme, parsley, salt, pepper, and lemon zest.
  2. Place chicken breasts in a resealable plastic bag and pour marinade over them. Seal tightly and refrigerate for at least 30 minutes or up to 4 hours.

  4. Grill chicken for 6-8 minutes on each side until internal temperature reaches 160°F. Brush with leftover marinade while cooking.
