Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini)
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash the cherry tomatoes and chop them in halves.
  2. Slice each avocado in half lengthwise and remove the pit. Scoop out a little of the flesh if desired.
  3. In a bowl, combine chopped tomatoes, mozzarella balls, chopped basil, olive oil, salt, and pepper. Mix until well combined.
  4. Generously fill each avocado half with the tomato mixture.
  5. Drizzle balsamic glaze over the stuffed avocados before serving.
