- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini)
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash the cherry tomatoes and chop them in halves.
- Slice each avocado in half lengthwise and remove the pit. Scoop out a little of the flesh if desired.
- In a bowl, combine chopped tomatoes, mozzarella balls, chopped basil, olive oil, salt, and pepper. Mix until well combined.
- Generously fill each avocado half with the tomato mixture.
- Drizzle balsamic glaze over the stuffed avocados before serving.
Notes
- Use ripe avocados that yield slightly when pressed for the best texture.
- Feel free to swap mozzarella for burrata cheese for an extra creamy experience.
- Add cooked quinoa or grilled chicken for added protein.
