- 2 ripe avocados
- 1 cup cherry tomatoes, chopped
- 1 cup fresh mozzarella balls (ciliegine)
- 1/4 cup fresh basil leaves, torn
- 2 tbsp balsamic glaze
- Salt and pepper to taste
Instructions
- Wash cherry tomatoes and basil. Chop tomatoes into bite-sized pieces and tear basil into smaller bits.
- Slice each avocado in half lengthwise, remove the pit, and scoop out a bit of flesh to create space.
- In a bowl, combine chopped tomatoes, mozzarella balls, and torn basil. Season with salt and pepper; mix well.
- Generously fill each avocado half with the tomato-mozzarella mixture.
- Drizzle balsamic glaze over each stuffed avocado.
- Serve on a platter or individual plates for guests to enjoy.
