- 200g feta cheese
- 4 large free-range eggs
- 1 cup cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh basil or oregano, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Prepare a baking dish for the ingredients.
- In a bowl, toss halved cherry tomatoes with olive oil, salt, and pepper. Spread them evenly in the baking dish.
- Place the feta cheese block in the center of the tomatoes and drizzle with additional olive oil.
- Crack the eggs gently over the tomatoes and feta without breaking the yolks.
- Season everything generously with salt, pepper, and herbs.
- Bake for 20-25 minutes until egg whites are set but yolks remain slightly runny.
- Remove from oven, garnish with extra herbs if desired, and serve hot with crusty bread or pita chips.

- For added flavor, substitute feta with goat cheese or ricotta.
- You can include vegetables like spinach or bell peppers for more nutrition.
