- 3–4 boneless skinless chicken breasts (1.5 lbs)
- 1/4 cup pure honey
- 1/4 cup balsamic vinegar
- 3 garlic cloves, minced
- 2 tbsp Dijon mustard
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh herbs (thyme or rosemary) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together honey, balsamic vinegar, minced garlic, Dijon mustard, olive oil, salt, and pepper until smooth.
- Place chicken breasts in a zip-top bag, pour in the marinade, seal tightly, and shake to coat. Marinate for at least 30 minutes.
- Arrange marinated chicken in a baking dish lined with parchment paper and pour any leftover marinade over it.
- Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
- Garnish with fresh herbs before serving.
