- 1 lb lean ground turkey
- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 cup bell peppers, chopped (any color)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups fresh spinach or kale
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic; sauté until translucent.
- Add ground turkey to the skillet. Cook until browned, breaking it apart with a spatula.
- Stir in diced sweet potatoes, cumin, and paprika. Cook for about 10-12 minutes or until sweet potatoes are tender.
- Add bell peppers during the last few minutes of cooking.
- Fold in spinach or kale just before serving until wilted.
Notes
- Feel free to swap out bell peppers for zucchini or add your favorite spices to customize the flavor.
- Store leftovers in an airtight container in the fridge for up to four days.
