- 2 bell peppers (red and yellow)
- 1 red onion
- 3 tbsp olive oil
- 1 tsp garlic powder
- 2 tbsp lemon juice
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together olive oil, garlic powder, lemon juice, paprika, salt, and pepper.
- Add cubed chicken breasts to the marinade and toss until fully coated. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor.
- Thread marinated chicken cubes onto skewers, alternating with chunks of bell peppers and onion.
- Preheat grill to medium-high heat (around 400°F/200°C) and ensure grates are clean.
- Grill skewers for 8-10 minutes per side until chicken is cooked through and has nice grill marks.
- Let skewers rest for a few minutes before serving. Enjoy with your favorite sides!

- For added variety, substitute chicken with shrimp or tofu and try different marinades.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
