Instructions
- Rinse figs under cool water and pat dry. Trim stems and cut figs into quarters.
- In a mixing bowl, combine quartered figs, sugar, and lemon juice. Let sit for 30 minutes to release juices.
- Transfer the fig mixture to a saucepan over medium heat. Stir occasionally until bubbling and thickened, about 15-20 minutes.
- Stir in vanilla extract and cook for an additional 5 minutes, stirring continuously.
- To test consistency, place a spoonful on a chilled plate; if it holds its shape after cooling for a minute, it’s ready.
- Pour hot fig jam into sterilized jars, seal tightly, and let cool before refrigerating.
