- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 12 oz penne pasta
- 8 oz fresh mozzarella cheese, cubed
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- ½ cup fresh basil leaves, torn
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- 1. Prepare your ingredients: Dice the chicken and mince the garlic.
- 2. Cook the chicken: In a large skillet over medium heat, heat olive oil. Add seasoned chicken pieces and cook until golden brown, about 8 minutes.
- 3. Add garlic and pasta: Stir in minced garlic for 30 seconds. Meanwhile, cook pasta according to package instructions until al dente.
- 4. Create the sauce: Drain pasta, reserving some cooking water. Combine cooked pasta with chicken in the skillet. Stir in reserved water and mozzarella, allowing to melt together.
- 5. Finish & serve: Toss in fresh basil before serving and sprinkle with Parmesan cheese.
Notes
- For added flavor, substitute chicken with shrimp or add veggies like spinach or bell peppers.
- Store leftovers in an airtight container in the fridge for up to three days; reheat gently on low heat.
