- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine pasta
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup bell peppers, chopped (red or yellow)
- 2 green onions, chopped
- 2 tablespoons extra virgin olive oil
- ½ cup grated Parmesan cheese
Instructions
- 1. Cook the pasta: Boil a large pot of salted water and cook the linguine until al dente. Drain and set aside.
- 2. Sauté the shrimp: In a skillet over medium heat, add olive oil. Once hot, add shrimp seasoned with Cajun seasoning. Cook until pink and opaque, about 3–4 minutes.
- 3. Add vegetables: Stir in garlic and bell peppers; sauté for another 3 minutes until fragrant and tender.
- 4. Create the sauce: Pour in heavy cream; simmer while stirring for about 5 minutes until thickened.
- 5. Combine: Add drained pasta to the skillet and toss until well coated with sauce.
- 6. Finish: Sprinkle Parmesan cheese on top, mix well, and garnish with green onions before serving.
