Instructions
- Brew a strong coffee and let it cool slightly.
- Crush the ladyfingers in a large bowl until they resemble coarse crumbs.
- In another bowl, blend the mascarpone cheese with sugar and vanilla extract until smooth.
- Gradually mix in the cooled coffee until well combined.
- Scoop tablespoon-sized portions of the mixture and roll them into balls.
- Roll each ball in cocoa powder until fully coated and place on a parchment-lined tray.
- Chill in the fridge for at least one hour to firm up.
