- 4 ripe peaches, sliced
- 4 cups arugula or spinach
- 1 cup crumbled feta cheese
- ½ cup toasted pecans or walnuts
- 2 tbsp honey or maple syrup
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash arugula or spinach under cool water and pat dry.
- Pit and slice peaches into half-inch wedges.
- In a large bowl, combine greens, sliced peaches, crumbled feta, and toasted nuts.
- In a small jar, whisk together honey (or maple syrup), lemon juice, and olive oil until smooth. Season with salt and pepper to taste.
- Drizzle dressing over the salad just before serving and toss gently.
Notes
- For added crunch, swap pecans for almonds or use a mix of nuts.
- Enjoy leftovers as a topping on yogurt or oatmeal.
