- 1 cup plain yogurt
- 1 cup granulated sugar
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- 3 large eggs
- ½ cup unsalted butter, melted
- 1 tsp vanilla extract
- Zest of 1 lemon or orange (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- In a large bowl, whisk together the eggs and sugar until pale and fluffy (about three minutes). Stir in the yogurt and melted butter until well combined.
- Sift in the flour and baking powder, folding gently with a spatula to avoid overmixing. If using, fold in citrus zest.
- Pour the batter into the prepared pan and smooth out the top. Bake for 30-35 minutes, or until golden brown and a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for ten minutes before transferring it to a wire rack.
Notes
- For added flavor, substitute plain yogurt with flavored varieties or mix in berries or nuts.
- Store leftovers in an airtight container at room temperature for up to three days.
