  3. In another bowl, whisk together the almond milk, vegetable oil, and vanilla extract until smooth.

  5. Spoon the batter into muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool completely before frosting.
