Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup unsalted butter (plus extra for greasing)
- 1/2 cup milk (whole, almond, or coconut)
- 2 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- Fresh pineapple rings (for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease a round cake pan with butter.
- In a skillet, melt 1/4 cup of butter with 1/2 cup brown sugar over medium heat until bubbly. Add pineapple rings and cook for about 5 minutes until caramelized.
- In a bowl, whisk together flour, granulated sugar, baking powder, and a pinch of salt. In another bowl, mix milk, eggs, melted butter (cooled), and vanilla extract until smooth.
- Gradually combine wet ingredients into the dry mixture until just blended—avoid overmixing.
- Pour the batter over the caramelized pineapples in the prepared pan and spread evenly.
- Bake for 35-40 minutes until golden brown; use a toothpick to check doneness. Let it cool before flipping onto a serving plate.
Notes
- For added texture, consider mixing in shredded coconut or chopped nuts.
- Substitute fresh pineapple with peaches or cherries for different flavor profiles.
- Ensure your ingredients are at room temperature for better mixing.
