- 1 loaf brioche or challah bread, cubed (about 10 cups)
- 6 large eggs
- 2 cups whole milk (or almond/oat milk)
- 8 oz cream cheese, softened
- 2 tsp ground cinnamon
- ½ cup pure maple syrup
- 2 cups fresh fruit (e.g., berries, bananas)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together eggs, milk, cream cheese, cinnamon, and maple syrup until smooth.
- Cut the bread into cubes and gently fold them into the egg mixture until well coated.
- Layer half of the soaked bread in a greased baking dish and sprinkle fresh fruit on top. Add the remaining bread cubes.
- Cover tightly with foil and refrigerate overnight.
- In the morning, let it sit at room temperature for about 30 minutes before baking uncovered for 45-50 minutes until golden brown.
Notes
- Use day-old bread for better texture; fresh bread can become soggy.
- Feel free to mix in chocolate chips or other fruits for added sweetness.
