- 1 lb lean ground turkey
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, no added sugar
- 1 cup black beans, rinsed (optional)
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook until fragrant, about 30 seconds.
- Increase heat slightly, add ground turkey, and cook until browned while breaking it apart with a spatula. Season with salt and pepper.
- Add diced bell peppers, cumin, paprika, and chili powder. Cook until peppers are softened, around 5 minutes.
- Pour in canned tomatoes and optional beans. Simmer on low heat for about 10-15 minutes.
- Taste and adjust seasoning if needed before serving hot.
Notes
- Feel free to experiment with different vegetables or spices to customize the flavor profile.
- Store leftovers in an airtight container in the fridge for up to four days or freeze for up to three months.
