Instructions
- Preheat your grill to medium heat (around 350°F or 175°C).
- Slice peaches, nectarines, and plums in half; remove pits while leaving the skin on.
- Brush fruit halves with olive oil to prevent sticking and enhance flavor.
- Grill fruit cut-side down for about 4-5 minutes until caramelized with grill marks.
- Remove from heat and let cool slightly before chopping into bite-sized pieces.
- In a mixing bowl, toss grilled fruits with lemon juice and chopped mint. Drizzle with honey if desired.
