  • Total Time: 50 minutes
  • Yield: Serves 9

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1/4 tsp baking powder
  • 2 cups fresh blackberries
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix melted butter and granulated sugar until creamy; stir in flour until crumbly. Press this mixture into the bottom of the baking dish and bake for 15 minutes until lightly golden.
  3. In another bowl, whisk eggs, then add granulated sugar, lemon juice, baking powder, and flour. Mix until smooth. Gently fold in blackberries.
  4. Pour the filling over the baked crust and return to the oven for 20-25 minutes until set but slightly jiggly in the center. Allow to cool completely before slicing and dusting with powdered sugar.

Notes

  • For added flavor, substitute blackberries with raspberries or blueberries. A splash of vanilla extract can enhance sweetness.
  • Ensure butter is cold when making the crust for optimal texture.
