- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs, room temperature
- 1/2 cup fresh lemon juice (about 2 lemons)
- 1/4 tsp baking powder
- 2 cups fresh blackberries
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix melted butter and granulated sugar until creamy; stir in flour until crumbly. Press this mixture into the bottom of the baking dish and bake for 15 minutes until lightly golden.
- In another bowl, whisk eggs, then add granulated sugar, lemon juice, baking powder, and flour. Mix until smooth. Gently fold in blackberries.
- Pour the filling over the baked crust and return to the oven for 20-25 minutes until set but slightly jiggly in the center. Allow to cool completely before slicing and dusting with powdered sugar.
Notes
- For added flavor, substitute blackberries with raspberries or blueberries. A splash of vanilla extract can enhance sweetness.
- Ensure butter is cold when making the crust for optimal texture.
