- 4 medium bell peppers (any color)
- 1 lb ground turkey
- 1 cup cooked rice (white or brown)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking dish.
- Cut the tops off the bell peppers and remove the seeds; rinse under cold water.
- In a skillet over medium heat, sauté onion and garlic in olive oil until fragrant (3-4 minutes).
- Add ground turkey and Italian seasoning; cook until browned (5-7 minutes).
- Stir in cooked rice and diced tomatoes; cook for another 5 minutes.
- Stuff each bell pepper with the turkey mixture, topping with cheese if desired.
- Place stuffed peppers upright in the baking dish, cover with foil, and bake for 25-30 minutes. Remove foil during the last 10 minutes if using cheese.

- Customize your stuffing by adding black beans or different spices according to your taste.
- For a burst of flavor, garnish with fresh herbs like parsley or cilantro before serving.
