  • 1 lb ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds; rinse under cold water.
  3. In a skillet over medium heat, sauté onion and garlic in olive oil until fragrant (3-4 minutes).
  4. Add ground turkey and Italian seasoning; cook until browned (5-7 minutes).
  5. Stir in cooked rice and diced tomatoes; cook for another 5 minutes.
  6. Stuff each bell pepper with the turkey mixture, topping with cheese if desired.
  7. Place stuffed peppers upright in the baking dish, cover with foil, and bake for 25-30 minutes. Remove foil during the last 10 minutes if using cheese.
