  • 6 large eggs
  • 1 cup asparagus, chopped
  • 1 cup bell peppers (red or yellow), diced
  • 2 cups baby spinach
  • 1 medium sweet onion, diced
  • ½ cup feta cheese, crumbled
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven broiler to high.
  2. Wash and chop all vegetables: cut asparagus into bite-sized pieces, dice bell peppers and onion finely.
  3. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent.
  4. Add bell peppers and asparagus; cook for about 3-4 minutes until slightly softened.
  5. In a bowl, whisk together eggs with salt and pepper. Fold in spinach until just wilted.
  6. Pour the egg mixture over sautéed vegetables in the skillet. Cook undisturbed on medium heat until edges begin to set.
  7. Transfer the skillet to the oven and broil for 1-2 minutes until golden brown on top.
