- 1 lb ground beef (80/20)
- 1 cup seasoned breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 tbsp ketchup
- 2 tbsp low-sodium soy sauce
- 1 tsp Dijon mustard
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until just combined.
- Shape the mixture into golf ball-sized meatballs (about 1 inch).
- Heat oil in a skillet over medium heat and brown meatballs on all sides (about 5 minutes). Remove from skillet and set aside.
- In the same skillet, add beef broth and bring to a simmer while scraping up browned bits from the bottom.
- Stir in ketchup, soy sauce, and Dijon mustard until well combined; return meatballs to the skillet.
- Cover and simmer on low for 15-20 minutes until cooked through.
Notes
- For added flavor, incorporate chopped mushrooms or bell peppers into the meat mixture.
- Substitute breadcrumbs with crushed crackers for a different texture.
