  • 1/4 cup honey or maple syrup
  • 1 cup almond milk (or any milk of choice)
  • 1 tsp baking powder
  • 2 large eggs (or flax eggs for a vegan option)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix the oats, baking powder, cinnamon, and a pinch of salt.
  3. Add almond milk, honey or maple syrup, eggs, and vanilla extract; stir until well combined. Gently fold in the diced apples.
  4. Fill each muffin cup about three-quarters full with the mixture.
  5. Bake for 20-25 minutes until golden brown on top. Allow to cool for 5 minutes before transferring to a wire rack.
