Ingredients

  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Gather all ingredients. Chop the sun-dried tomatoes and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 6-7 minutes per side). Remove from skillet.
  3. In the same skillet, add minced garlic and sun-dried tomatoes; cook until fragrant.
  4. Pour in heavy cream, scraping up any browned bits from the pan. Stir in grated Parmesan until melted and smooth.
  5. Add fresh spinach, stirring until wilted (about 3 minutes).
  6. Return the chicken to the skillet, coating each piece with sauce. Simmer for an additional few minutes before serving.

  • For added flavor, consider using fresh basil or thyme.
  •  Substitute kale for spinach if desired.
