- 4 boneless skinless chicken breasts (1.5 lbs)
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- Gather all ingredients. Chop the sun-dried tomatoes and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 6-7 minutes per side). Remove from skillet.
- In the same skillet, add minced garlic and sun-dried tomatoes; cook until fragrant.
- Pour in heavy cream, scraping up any browned bits from the pan. Stir in grated Parmesan until melted and smooth.
- Add fresh spinach, stirring until wilted (about 3 minutes).
- Return the chicken to the skillet, coating each piece with sauce. Simmer for an additional few minutes before serving.
Notes
- For added flavor, consider using fresh basil or thyme.
- Substitute kale for spinach if desired.
- To store leftovers, place in an airtight container for up to three days and reheat gently over low heat.
