Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix cranberry sauce, balsamic vinegar, minced garlic, and chopped rosemary.
- Season the beef roast with salt and pepper.
- Marinate the roast by placing it in a resealable bag with half of the marinade; refrigerate for at least 2 hours or overnight.
- Sear the marinated roast on all sides in a hot skillet until browned.
- Transfer to a baking dish, pour remaining marinade over it, and roast for about 1.5-2 hours until it reaches an internal temperature of 135°F (57°C) for medium-rare.
Notes
- For optimal tenderness, let the roast rest covered with foil for about 15 minutes before slicing.
- Consider adding seasonal vegetables like carrots and Brussels sprouts alongside the roast for added nutrition and flavor.
