- 1 cup unsalted butter, room temperature
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup powdered sugar (for icing)
- 2 tbsp milk (for icing)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
- Add the egg and vanilla extract; mix until well combined.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
- Drop rounded mounds of dough onto prepared sheets about two inches apart. Slightly flatten each mound.
- Bake for 10-12 minutes until golden around the edges but soft in the center.
- While cooling, whisk powdered sugar with milk to make an icing drizzle. Adjust consistency as needed.
- Drizzle icing over cooled cookies and enjoy!
