Instructions

  1. Cook the brown rice according to package instructions.
  2. In a large skillet over medium heat, sauté onion and bell peppers until soft (5–7 minutes).
  3. Push veggies aside; add ground beef and cook until browned (about 8 minutes), breaking it apart as it cooks.
  4. Stir in cumin, chili powder, and black beans; cook until heated through (3–4 minutes).
  5. Assemble bowls starting with brown rice, layer on the beef mixture, top with avocado slices and any other desired toppings.
  6. Finish each bowl with a squeeze of fresh lime juice.
