- 1 cup fresh asparagus (trimmed and cut into 2-inch pieces)
- 4 oz goat cheese (crumbled)
- 1/2 cup heavy cream
- 3 large eggs
- 1/2 tsp salt

- Zest of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- Roll out the puff pastry on a floured surface to about 1/8 inch thick, then transfer it to the prepared tray.
- In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and lemon zest until smooth.
- Evenly distribute the asparagus pieces over the pastry base. Crumble goat cheese on top.
- Pour the egg mixture over the asparagus and cheese.
- Bake for 25-30 minutes until golden brown. Let cool slightly before slicing.
Notes
- For variety, substitute asparagus with spinach or bell peppers and consider adding herbs like thyme or basil for extra flavor.
- Store leftovers in an airtight container in the fridge for up to three days; reheat in the oven at 350°F until warm.
