Instructions

  1. Preheat the oven to 325°F (160°C) and grease a baking pan.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared pan.
  3. In another bowl, blend cream cheese until smooth. Gradually add sugar, then mix in vanilla and eggs one by one until fully combined.
  4. Pour the mixture over the crust and bake for 30-35 minutes, until edges are set but center is slightly jiggly.
  5. Cool at room temperature for an hour, then refrigerate for at least 3 hours.
  6. Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
