- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 tsp pure vanilla extract
- 3 large eggs, at room temperature
- ¼ cup granulated sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C) and grease a baking pan.
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared pan.
- In another bowl, blend cream cheese until smooth. Gradually add sugar, then mix in vanilla and eggs one by one until fully combined.
- Pour the mixture over the crust and bake for 30-35 minutes, until edges are set but center is slightly jiggly.
- Cool at room temperature for an hour, then refrigerate for at least 3 hours.
- Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
