- 3–4 boneless chicken breasts (1.5 to 2 lbs)
- 6 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 8 oz pasta of choice (penne or rotini recommended)
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
Instructions
- Sauté the garlic: Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
- Prepare the chicken: Season boneless chicken breasts with salt and pepper. Place them in the bottom of the slow cooker.
- Add ingredients: Pour sautéed garlic over the chicken. Then add heavy cream, chicken broth, and Italian seasoning.
- Cook: Cover and set the slow cooker on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- Cook pasta: About 15 minutes before serving, cook pasta according to package instructions until al dente; drain.
- Combine: Shred the cooked chicken in the slow cooker using two forks. Stir in grated parmesan until melted, then gently fold in cooked pasta.

- For added nutrition, consider mixing in vegetables such as spinach or bell peppers.
- You can substitute chicken thighs for extra juiciness during cooking.
