- 1 lb boneless chicken thighs
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 tsp garlic powder
- 2 large eggs (beaten)
- 1/2 cup hot sauce (to taste)
- 1/3 cup mayonnaise
- 2 tbsp honey
- 2 tbsp lime juice
- Cooking oil (for frying)

Instructions
- Trim excess fat from chicken thighs and cut into bite-sized pieces.
- Set up three shallow bowls: one with flour mixed with garlic powder, another with beaten eggs, and the last with panko breadcrumbs.
- Coat each piece of chicken in flour, dip in egg wash, then roll in panko breadcrumbs.
- Heat oil in a skillet over medium-high heat until shimmering (about 350°F).
- Fry chicken pieces in batches until golden brown and crispy (4-6 minutes per side). Drain on paper towels.
- For the sauce, mix mayonnaise, honey, lime juice, and hot sauce until smooth.
- Serve chicken drizzled with sauce or toss together for maximum flavor.
Notes
- For added crunch, let the breaded chicken rest for a few minutes before frying.
- Feel free to customize the spice level by adjusting the amount of hot sauce.
