- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp baking powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, pulse the chickpeas until coarsely mashed. Add garlic and parsley; pulse until combined.
- Transfer the mixture to a bowl. Stir in cumin, baking powder, olive oil, salt, and pepper until well mixed.
- With wet hands, form the mixture into small patties (about two tablespoons each) and place on the baking sheet.
- Bake for 25–30 minutes, flipping halfway through until golden brown and crispy.
Notes
- For added flavor, experiment with spices like coriander or swap chickpeas for black beans.
- Serve with tahini sauce or in pita bread with fresh veggies for a delightful meal.
