Instructions
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; cook for 3–4 minutes until softened.
- Add Tomatoes: Pour in the canned diced tomatoes with their juices. Stir and let simmer for about 5 minutes.
- Create Creamy Sauce: Reduce heat to low and stir in heavy cream until well combined, creating a rich sauce.
- Cook Tortellini: Add the cheese tortellini to the sauce and cook according to package instructions (about 3–4 minutes).
- Finish Up: Season with salt and pepper to taste, then stir in freshly chopped basil before serving.

- For added flavor, consider incorporating fresh spinach or sautéed mushrooms.
- To store leftovers, place them in an airtight container in the fridge for up to three days. Reheat gently on low heat with a splash of cream or broth.
