- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil

Instructions
- Boil a large pot of salted water. Cook the penne according to package instructions until al dente. Drain and reserve some pasta water.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
- Stir in roasted red peppers and cream cheese, mixing until smooth and combined.
- Add the cooked pasta to the skillet, tossing to coat with the sauce. If too thick, gradually add reserved pasta water until desired consistency is reached.
- Stir in grated Parmesan cheese and season with salt. Serve hot, garnished with fresh basil if desired.

- For added protein, consider including grilled chicken or sautéed spinach.
- To enhance flavor, sprinkle crushed red pepper for a spicy kick.
- Use freshly roasted peppers for a more robust taste.
