- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fresh button or cremini mushrooms, sliced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme
- Optional: 1/4 cup grated Parmesan cheese
Instructions
- Prep your ingredients by slicing the mushrooms and mincing the garlic.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper; sear for 6-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sliced mushrooms; sauté for about 5 minutes until mushrooms are tender.
- Pour in heavy cream and chicken broth, scraping any flavorful bits from the pan. Simmer for about 5 minutes until slightly thickened.
- Return seared chicken to the skillet, allowing it to soak in the sauce for a few minutes until heated through.
- Stir in thyme and sprinkle with Parmesan before serving hot.
Notes
- For added flavor, marinate chicken briefly before cooking.
- Feel free to substitute seasonal vegetables or different types of mushrooms.
