- 8 oz penne pasta
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 1 tbsp Cajun seasoning
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup bell peppers, chopped (variety of colors)
- 2 tbsp fresh parsley, chopped
Instructions
- Boil salted water in a large pot and cook penne pasta until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil. Sauté minced garlic for about 1 minute until fragrant.
- Add chopped bell peppers and Cajun seasoning; cook for 3-4 minutes until peppers soften.
- Stir in heavy cream and simmer for 3-5 minutes until thickened.
- Add cooked penne and Parmesan cheese; toss until pasta is well-coated with the sauce.
- Garnish with fresh parsley before serving.
Notes
- For added protein, consider including shrimp or chicken.
- Adjust the spice level by modifying the amount of Cajun seasoning or adding cayenne pepper.
- Serve with a side salad for a complete meal.
