Ingredients
Scale
- 2 ripe avocados
- 8 oz spaghetti or penne
- 3 cloves fresh garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta: Boil a large pot of salted water over high heat. Add pasta and cook according to package instructions until al dente.
- Prepare the avocado sauce: While the pasta cooks, halve the avocados, remove pits, and scoop flesh into a mixing bowl.
- Combine flavors: Add minced garlic, lemon juice, olive oil, salt, and pepper to the avocados. Mash until smooth but slightly chunky.
- Mix pasta with sauce: Drain the pasta (reserve some cooking water) and toss it with the avocado mixture until evenly coated. If too thick, add reserved cooking water as needed.
- Taste and adjust seasoning: Sample your dish and adjust salt or pepper if necessary.
- Serve immediately: Garnish with fresh herbs like basil or parsley if desired.
Notes
- For added flavor, consider mixing in lemon zest or cherry tomatoes.
- This dish is best enjoyed fresh but can be stored in an airtight container in the fridge for up to two days.
